Sharpening is s breeze compared to my Japanese knifes. The 5 and 6 inch chef knives are thin and do not have a traditional chef knife rocker. The blade is a little too narrow to be used for board chopping/slicing, your knuckles will be banging into the cutting board. The picture is the 10, 8, 6 and 5 inch chef knives for comparison.

I really notice the flexing of the blade when trying to get through a chicken joint or the cartilage of cooked ribs, etc. No bones or anything. I hate using dull knives and the Victorinox knives retain sharpness very well and tune up with a "steel" in no time. Best knives ever & I have recommended to friends who subsequently purchased their own.

This knife is very versatile and easy to handle which makes it perfect for everyday use. And a great one when used for that purpose. This 6" knife is wonderful thanks to its quality and lightness. Really, razor sharp.

If I were building a new knife set for general kitchen use I'd get this 6" and also either the 8" or 10" Chef's Knife with the Fibrox handles. They use good steel, are easy to sharpen, and can be put in a dishwasher (however I NEVER put kitchen knives in the dishwasher, but you could and for some that's probably an attractive feature).
