Yoshino Kuzu Arrowroot Starch 130g by Manto

Its high content of complex starch molecules makes it a powerful thickening agent. It is naturally extracted from the roots of one of Japan’s most vigorous mountain plants. It is ideal to use to thicken soups and stews, sweet and savoury sauces, glazes and pie fillings. Kuzu has been a valued ingredient in Japanese cuisine and confectionery for more than two thousand years. Clearspring's kuzu producer has been making kuzu for five generations, and still carefully follows the traditional 120-day process of washing, settling, filtering and drying the pure organic kuzu root starch that it supplies to Clearspring. While standard thickeners like cornflour can do much the same job, they tend to be highly processed and treated with chemical bleaches and extracting agents, whereas Clearspring pure organic kuzu is a completely natural gluten-free starch. It is fat-free, sugar-free, and gluten-free.

But still -- a pretty hefty price for something as routine as thickening up a stew! Corn starch is fine for gluten-free, but it's not GRAIN free -- so it's not ideal if you're doing Paleo. I bought this as a grain-free thickener for stews and curries.

This is at least 5-7x more expensive than corn starch, and you'll need to use more. It requires a little more than the equivalent amount of corn starch, but it works.

I'd never heard of Kuzu before, so this was somewhat experimental. The only downside is the price.

It turned out to be a pretty good choice. On the plus side, it actually does thicken up sauces, and without altering the flavour (at least with strong dishes; haven't tried it with 'plainer' sauces). It comes in 'crystals' rather than a powder (see the attached pic), but these easily dissolve in water just the same. If getting this for the grain-free element, you're probably used to paying the 'Paleo tax' anyway, and this will last for a good few meals.
