I also ran into an issue with the Al taglio pizza recipe. Or just use a tiny pinch, there’s no need to be THAT specific, IMO. This book and Elements of Pizza are excellent. The author shares his passion for pizza and his experience in cooking in an easy to understand way, and the recipes are varied and delicious.

Those are my pizza books for any time. Only a few things I’ve noticed that are “strange” to me. It includes information on types of flour, yeast, fermentation and kneading, and the author offers useful tips on how to get the perfect texture of the dough.

So many pizza recipes! Note: I paid in full for my book and am not doing this review in exchange for a free copy. Great tasting pizza and lots of choices. The section on dough is especially detailed and essential for anyone who wants to make a perfect pizza.
