I had been making Neopolitan style pizzas but bought this to do some NY style. My favourite loaf is a half rimacinata, half white bread flour version with a yogurt levain and replacing 200g of the water with milk.

I adapt recipes to sourdough versions for my Panasonic bread maker and this flour is so good. Turns out lovely and soft. I had my electric pizza oven (Ariete) , and no proper pizza peel.
