The soy sauce is aged in large wooden barrels which have been used for over 150 years since the foundation of Yamaroku. Kikubishio Shoyu is made with Tanba kuromame (Japanese high class black soybean) and Japanese wheat cultivar called Sanuki-no-Yume which is originally bred for udon. This makes the flavor very rich and full. Aged for 4 years, this deep body and mellow soy sauce is highly recommended for foods such as sashimi, mochi, hot pots, fried rice, and garlic based dishes. jp/en What makes Kikubishio different from the other soy sauces is the ingredients.

Definitely worth the $40. This soy sauce is rich and deep in flavor, umami! When I saw the short documentary by Great Big Story and Business Insider, I knew I had to give this legendary soy sauce a try.
A great value for money if you appreciate time and quality. It's pure, very full and it doesn't have that piercing saltiness to it. If you are into Japanese food and want something to compliment your meal, this soy sauce is the real deal. Worth the purchase.
